Mushrooms are the poster child for vegan and vegetarian cooking. I ran a daily-changing vegan entrée in my restaurants for about 8 years, so I know a thing or two here.
What you'll find here are my favorite vegan mushroom recipes, or those that can easily be made vegan if not specifically described as such. Most of them will be vegan as-is without substitutions, like mushroom chili and mushroom barbacoa, as well as my mushroom tagine.
With some recipes you may need to change butter for olive oil, or chicken broth for mushroom or vegetable broth.
