General Cooking
The most important thing to know about cooking chanterelles is that the mushrooms are usually cooked whole.
Large mushrooms can be chopped or made into wild mushroom duxelles, but the buttons and mushrooms harvested before the mushrooms sporulate have a very special texture you won't get in another mushroom.
They're wonderful sauted or steamed and marinated, gently roasted, pickled or used just about anywhere you want a great mushroom.
