    Lobster Mushroom Recipes

    About 

    Lobster mushrooms (Hypomyces lactiflourum) are one of a number of fungi that infect other fungi, changing their shape, and in the case of the lobster, making them a good edible. They have a mild flavor but are easy to identify, plentiful, bug-resistant, and fun to cook with.

    General Cooking

    Lobsters have a mild taste but make up for it with texture. They're so firm they can be shaved paper thin or grated like you'd treat a potato.

    Their firm texture holds up well in soup, and as a substitute for meat in dishes like chili or pasta sauces.

    Telling Old vs Fresh

    Eating old mushrooms can make you sick, and old lobster mushrooms are regularly sold to coops and commercial suppliers. You should also know some people have a natural allergy to lobster mushrooms regardless of quality.

    Here's how to tell the good from the old if you're purchasing or foraging yourself.

    • Ideally they're heavy like paperweights with few blemishes, bright red without any noticeable purple discoloration.
    • Old mushrooms will have their red color start to bleed and change to purple and are light-weight and brittle with a strong odor of fish.
