Lobster mushrooms (Hypomyces lactiflourum) are one of a number of fungi that infect other fungi, changing their shape, and in the case of the lobster, making them a good edible. They have a mild flavor but are easy to identify, plentiful, bug-resistant, and fun to cook with.

Here's how to tell the good from the old if you're purchasing or foraging yourself.
- Ideally they're heavy like paperweights with few blemishes, bright red without any noticeable purple discoloration.
- Old mushrooms will have their red color start to bleed and change to purple and are light-weight and brittle with a strong odor of fish.
