Shaggy Parasol Recipes
About
Shaggy parasol mushrooms, also known as Chlorophyllum rhacodes, are an edible wild mushroom that taste great, but require a little knowledge of mushroom identification for safety.
If you're new to these mushrooms, check out Foraging and Cooking Shaggy Parasol Mushrooms. The most traditional recipe I know for them is Parasol Caps Stuffed with Wild Rice.
Spores
One of the most trusted ways of telling a true shaggy from the imposter: the green-spored sickener (C. molybdites) is the spores. True shaggy parasols will always have a white spore print. The dangerous look alike has green spores.
Cooking
This is a mushroom with a long tradition of use in Europe. Traditionally the caps are used, and are often stuffed or made into schnitzel. The stems are slightly tougher than the caps and should be finely diced or chopped.
