About
Coral mushrooms, also known as Ramaria, are an intermediate-level mushroom to identify and cook. If you get the right species they can be delicious, but they take some time to get to know. Here's some of my favorite recipes and some quick tips on getting to know them.

Crown Corals
Not technically in the Ramariaceae, crown corals only grow from wood, where Ramaria grow directly from the ground. They're much more delicate and wispy, but they're easy to identify and have a good flavor.
These are delicate mushrooms that wilt down in a pan, so I prefer to use them in soup, or with methods than compliment their texture.
