Shaggy Mane Recipes
About
Shaggy manes, shaggy ink cap, or Coprinus comatus are a common edible wild mushroom that's relatively easy to identify.
On this page I'll go over a few brief things about them, followed by recipes made exclusively for them or where they can be used. If you're new to these mushrooms, please read Foraging and Cooking Shaggy Mane Mushrooms.
Alcohol
Yes, you can drink alcohol with shaggy mane mushrooms.
It's often assumed you can't drink with these, but this is probably because shaggy manes get mis-identified and people eat Coprinopsis atramentaria and other mushrooms, which cause a reaction with alcohol-true shaggy manes do not.
Ink
Historically inky cap mushrooms were, as the name implies, used to make writing ink. What many people don't know is that the mushrooms can also be used to make culinary mushroom ink. It's a black mushroom puree with a mild, pleasant flavor. I like to use it in pasta and risotto.
