    Candy Cap Recipes

    About

Candy cap mushrooms have an intense aroma of maple syrup, making them one of the few wild mushrooms that make great desserts. If you don't pick your own, they'll set you back about $200/lb dried.

    General Cooking

    • These are potent: a little goes a long way
    • 1 teaspoon of ground candy caps per pint of cream or other liquid is a good place to start creating your own recipes
    • The easiest way to cook with candy caps is to crumble the mushrooms or leave them whole and infuse into dairy
    • They can be ground and added directly to baked goods and will surprise you with how powerful they are
    • They like to be infused into liquid, especially ice cream and syrup-based things like caramel sauce
    • Adding too much will make a dish bitter
