    Recipes Using Golpar (Cow Parsnip Seed)

    About

    Golpar is traditionally the seed of a wild plant known as Heracleum persicum. It's harvested in the middle east and used to flavor dishes with legumes, as well as things like pomegranites, olives, fresh fava beans and cheese.

    Safety

    Cow parsnip and many other plants in the carrot family contain photo-toxic compounds in the sap of the green, above-ground portion of the plant that can give you a rash if the sap is on the skin and it's exposed to sun (photo-dermatitis).

    The good part is that when cow parsnip seeds are ready to harvest, the plant is dried and will not hurt you.
