3tablespoonhigh heat cooking fat like lard or canola
2tablespoonsbutter
1.5tablespoonfresh snipped chives
Kosher salt and pepper
Instructions
Heat the oil in a large saute pan until lightly smoking.
Add the chanterelles and cook until golden brown, caramelized and fully cooked. Season the chanterelles to taste with salt, then add the butter and chives to the pan, stir, and cook 3o seconds more.
Drain the chanterelles on paper towels and serve immediately.
