Fermented Horseradish Creme Fraiche
Overnight fermented creme fraiche flavored with fresh grated horseradish Makes 1 pint jar

Ingredients

fresh grated horseradish about ¾ cup
½
teaspoon
salt

teaspoon
sugar
1.5
cups
heavy cream
2
tablespoons
yogurt or buttermilk
1
tablespoon
vinegar
Instructions
Combine the cream, yogurt and horseradish in a jar, wrap in a towel and allow to sit overnight in a place with ambient warmth--room temperature is usually fine.
The next day, stir the mixture--it should thicken like cream.
Add the vinegar, salt and sugar, and refrigerate.
The creme fraiche will keep for 2 weeks.
