These are very interesting mushrooms. Milk caps are called as such because when they are cut or injured they will bleed a bit of latex, a sort of gluey substance. This has nothing to do with their flavor though, and they are delicious. My two favorites are the saffron milk cap and lactarius indigo, which is incredibly blue. Often, I find that these mushrooms may have a subtle sea food flavor, especially when dried, although the saffron milkcap smells more of fish that the lactarius indigo.
